Ingredients
  

2 boneless, skinless chicken breasts

4 cups low-sodium chicken broth

1 cup water

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 teaspoons ground turmeric

1 teaspoon cumin

1/2 teaspoon black pepper

1 cup carrots, diced

1 cup celery, diced

1 cup kale or spinach, chopped

1 tablespoon lemon juice

Salt to taste

Fresh parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until it becomes translucent.

    Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

      Add the ground turmeric, cumin, and black pepper to the pot, stirring well to coat the onion mixture in spices. Cook for another minute.

        Pour in the chicken broth and water, bringing the mixture to a gentle simmer.

          Add the chicken breasts to the pot, submerging them into the broth. Simmer for about 15-20 minutes, or until the chicken is cooked through.

            Remove the chicken from the pot and set it aside to cool slightly. While it cools, stir in the diced carrots and celery. Cook for an additional 10 minutes or until the vegetables are tender.

              Shred the chicken into bite-sized pieces, then return it to the pot along with the chopped kale or spinach.

                Season the soup with lemon juice and salt to taste. Let it simmer for 5 more minutes until the greens are wilted and everything is heated through.

                  Serve hot, garnished with fresh parsley for added flavor and color.
