4 large whole wheat tortillas

1 cup cream cheese, softened (or hummus for a vegan option)

1 cup shredded carrots

1 cup bell peppers (red, yellow, and green), julienned

1 cup fresh spinach leaves

1 cup cucumber, thinly sliced

1/2 cup purple cabbage, finely shredded

2 tablespoons fresh herbs (such as dill or cilantro), chopped

Salt and pepper to taste

Prepare the Spread: In a bowl, mix the softened cream cheese with a pinch of salt, pepper, and chopped fresh herbs until well combined. Set aside.

    Assemble the Tortilla: Lay one tortilla flat on a clean cutting board. Spread an even layer of the cream cheese mixture over the tortilla, leaving a small border around the edges.
