Pink velvet cookies are a delightful twist on the classic red velvet cookie. The main difference lies in the color. While red velvet cookies have a deep red hue, pink velvet cookies offer a lighter, softer pink shade. This change in color happens due to the amount of food coloring used. Pink velvet cookies often use less food coloring, giving them that charming pastel look.

Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 tablespoon buttermilk

2 tablespoons red food coloring

1 cup white chocolate chips

1/4 cup powdered sugar (for dusting)

Instructions

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and light in color, about 2-3 minutes.

Add the egg, vanilla extract, buttermilk, and red food coloring to the butter-sugar mixture. Mix until well combined.

Gradually add the flour mixture to the wet ingredients, stirring until just combined. Be careful not to over mix.

Fold in the white chocolate chips until evenly distributed throughout the dough.

Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving space between each cookie as they will spread.

Bake for 10-12 minutes until the cookies are set but still soft in the center. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Once cooled, dust lightly with powdered sugar for a beautiful presentation.
