4 bone-in, skin-on chicken thighs

1 pound baby potatoes, halved or quartered

4 tablespoons olive oil

6 cloves garlic, minced

1 teaspoon dried Italian herbs (or a mixture of oregano, basil, and thyme)

1 teaspoon paprika

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the halved baby potatoes with 2 tablespoons of olive oil, half of the minced garlic, Italian herbs, paprika, salt, and pepper. Toss until the potatoes are evenly coated.

      In a separate bowl, rub the chicken thighs with the remaining olive oil, minced garlic, salt, and pepper.

        Arrange the seasoned potatoes in a single layer in a large oven-safe skillet or baking dish. Place the chicken thighs on top of the potatoes, skin side up.

          Sprinkle the grated Parmesan cheese generously over the chicken and potatoes.

            Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown and crispy.

              Remove from the oven, and let it rest for 5 minutes before serving.
