Ingredients
  

1 pre-made pizza dough

1 cup corn kernels (fresh or frozen)

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

1/2 cup crumbled cotija cheese

1/4 cup mayonnaise

1 tablespoon lime juice

1/4 cup fresh cilantro, chopped

1 jalapeño, thinly sliced (optional, for heat)

1/2 cup mozzarella cheese, shredded

Instructions
 

Preheat your oven to 475°F (245°C) and place a baking sheet or pizza stone inside to heat.

    In a skillet over medium heat, add the olive oil. Once hot, add the corn kernels and sauté for about 5-7 minutes until slightly charred. Stir in smoked paprika, cumin, and season with salt and pepper. Cook for another couple of minutes then remove from heat.

      In a small bowl, mix together the mayonnaise, lime juice, and half of the chopped cilantro. This will serve as your sauce” for the pizza.

        Roll out the pizza dough on a floured surface to your desired thickness, then carefully transfer it onto a parchment-lined baking sheet or preheated pizza stone.

          Spread the lime mayonnaise mixture evenly over the surface of the dough, leaving a little border around the edges.

            Sprinkle the mozzarella cheese over the mayonnaise layer, followed by the sautéed corn mixture.

              Distribute the crumbled cotija cheese on top and add jalapeño slices if desired.

                Bake in the oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.

                  Once out of the oven, garnish the pizza with the remaining cilantro and slice it into wedges.
