1 pound raw shrimp, peeled and deveined

1 cup fresh lime juice (about 8 limes)

1 medium red onion, finely chopped

1 large tomato, diced

1 cucumber, peeled and diced

1 jalapeño, seeded and minced

1/2 cup fresh cilantro, chopped

Salt and pepper to taste

Tortilla chips, for serving

Instructions
 

Begin by chopping the shrimp into small bite-sized pieces and place them in a large glass or ceramic bowl.

    Pour the fresh lime juice over the shrimp, making sure they are fully submerged. This will cook the shrimp. Cover the bowl with plastic wrap and place it in the refrigerator for about 30-45 minutes, or until the shrimp turn pink and opaque.

      While the shrimp is marinating, prepare the vegetables. In a separate bowl, combine the chopped red onion, diced tomato, diced cucumber, minced jalapeño, and chopped cilantro.

        After the shrimp has marinated, drain a little of the excess lime juice (if desired) and add the vegetable mixture to the shrimp bowl.

          Stir gently to combine all the ingredients, and season with salt and pepper to taste. Adjust the seasoning and lime juice if needed.

            Serve the ceviche chilled, accompanied by tortilla chips for scooping.
