8 slices of thick bread (such as brioche or challah)

8 oz cream cheese, softened

1 cup fresh strawberries, hulled and sliced

2 tablespoons powdered sugar (plus extra for dusting)

1 teaspoon vanilla extract

3 large eggs

1 cup milk

1 teaspoon cinnamon

1 tablespoon butter (for cooking)

Maple syrup (for serving)

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and half of the sliced strawberries. Mix until well blended and creamy.

    Take four slices of bread and spread a generous layer of the cream cheese mixture on each. Top with the remaining sliced strawberries, then place the other four slices of bread on top to create sandwiches.

      In a separate bowl, whisk together the eggs, milk, and cinnamon until well combined.

        Heat a large skillet or griddle over medium heat and melt the butter.

          Dip each stuffed sandwich into the egg mixture, ensuring both sides are well coated.

            Place the sandwiches in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.

              Once cooked, remove from the skillet and dust with powdered sugar.
