4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup celery, diced

1 cup red bell pepper, diced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon thyme

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

2 tablespoon olive oil

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onions and garlic, and sauté until translucent, about 5 minutes.

    Incorporate the diced celery and red bell pepper into the pot, continuing to sauté for an additional 3-4 minutes until vegetables soften.

      Add the diced potatoes to the pot, stirring well to combine with the sautéed vegetables.

        Season the mixture with Cajun seasoning, smoked paprika, thyme, salt, and pepper, stirring well to evenly coat the potatoes.

          Pour in the vegetable broth, bringing the soup to a simmer. Reduce heat to low and cover the pot. Let it cook for about 20-25 minutes or until the potatoes are tender.

            Once the potatoes are soft, remove the pot from the heat. Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

              Return the pot to low heat and stir in the heavy cream (or coconut cream), allowing the soup to warm for an additional 5 minutes. Adjust seasoning with salt and pepper as needed.

                Serve warm, garnished with chopped green onions and parsley.
