4 slices of sourdough bread

6 oz brie cheese, sliced

6 strips of cooked bacon, crumbled

1/2 cup fresh blackberries

2 tablespoons honey

2 tablespoons unsalted butter, softened

Fresh thyme leaves for garnish (optional)

Salt and pepper to taste

Instructions
 

Preheat a large skillet or griddle over medium heat.

    In a small bowl, mix the fresh blackberries with honey, mashing slightly with a fork to create a chunky spread. Season with salt and pepper to taste.

      Take two slices of sourdough bread and layer on half of the brie slices evenly.

        On top of the brie, sprinkle the crumbled bacon, followed by the blackberry mixture. Add the remaining brie slices on top.

          Top with the second slice of bread to create a sandwich.

            Spread softened butter on the outer sides of the sandwich.

              Carefully place the sandwich onto the preheated skillet. Cook for about 3-4 minutes or until the bread is golden brown.

                Flip the sandwich carefully and cook the other side for another 3-4 minutes, until the cheese is melted and gooey.

                  Remove the sandwich from the skillet and let it rest for a minute.

                    Slice the sandwich in half and garnish with fresh thyme leaves for an aromatic touch.
