4 cups fresh broccoli florets

1 cup cooked white rice

1 cup shredded cheddar cheese

1 cup mayonnaise

1/4 cup chopped onion

1/4 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup crushed buttery crackers (like Ritz)

2 tablespoons melted butter

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot of boiling water, blanch the broccoli florets for about 2-3 minutes, just until bright green and slightly tender. Drain and set aside.

      In a mixing bowl, combine the cooked white rice, shredded cheddar cheese, mayonnaise, chopped onion, milk, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are well incorporated.

        Fold the blanched broccoli into the rice mixture until evenly coated.

          Transfer the mixture into a greased 9x13 inch baking dish and spread it out evenly.

            In a separate small bowl, mix the crushed buttery crackers with the melted butter. Sprinkle this crumb mixture evenly over the top of the broccoli bake.

              Bake in the preheated oven for 30-35 minutes, until the top is golden brown and the bake is heated through.

                Allow to cool slightly before slicing into squares for serving.
