Zucchini Rolls

2 medium zucchinis

1 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 tablespoon fresh basil, chopped

1 tablespoon fresh parsley, chopped

1 tablespoon lemon zest

1/2 teaspoon garlic powder

Salt and pepper to taste

1 cup marinara sauce (homemade or store-bought)

Olive oil for drizzling

Prepare the Zucchini: Slice the zucchinis lengthwise into thin strips (about 1/8 inch thick) using a mandoline or a sharp knife. Lay the strips on paper towels and sprinkle lightly with salt. Let them sit for about 15 minutes to draw out excess moisture.

    Mix the Filling: In a medium bowl, combine ricotta cheese, grated Parmesan, chopped basil, chopped parsley, lemon zest, and garlic powder. Season the mixture with salt and pepper to taste. Set aside.

      Grill the Zucchini: Preheat a grill pan over medium-high heat. Lightly brush the zucchini slices with olive oil on both sides. Grill the zucchini strips for about 2-3 minutes on each side until tender and slightly charred. Remove from the grill and let them cool slightly.

        Assemble the Rolls: Place a tablespoon of the ricotta mixture onto one end of each zucchini strip. Carefully roll the zucchini around the filling and secure with a toothpick if necessary. Repeat this process until all zucchini and filling are used.

          Prepare the Marinara Sauce: In a small saucepan, heat the marinara sauce over low heat until warmed through.

            Serve the Rolls: To serve, spread a layer of marinara sauce on a serving platter. Arrange the zucchini rolls on top and drizzle with any remaining olive oil. Optionally, garnish with extra herbs or a sprinkle of Parmesan cheese.
