Zucchini Ricotta Pasta

12 oz pasta (spaghetti or fettuccine)

2 medium zucchinis, spiralized or thinly sliced

1 cup ricotta cheese

1 cup cherry tomatoes, halved

2 cloves garlic, minced

3 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper to taste

¼ cup fresh basil, chopped

¼ cup grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Reserve about 1 cup of pasta water before draining and set aside.

    Sauté the Zucchini: In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Add the Zucchini: Stir in the spiralized or sliced zucchini and cook for 2-3 minutes until slightly softened.

        Combine Ingredients: Add the halved cherry tomatoes to the skillet and cook for another 2 minutes until they start to soften.

          Mix the Pasta: Add the drained pasta to the skillet along with the ricotta cheese, lemon zest, and juice. Toss everything together, adding a bit of reserved pasta water if the mixture seems too dry. Season with salt and pepper to taste.

            Finish and Serve: Remove from heat and fold in the chopped basil. If desired, sprinkle grated Parmesan cheese on top before serving.
