long-grain white rice

vegetable broth (or water)

Instructions
Rinse the rice under cold water until the water runs clear to remove excess starch.
In a medium saucepan, heat the olive oil over medium heat.
Add the rinsed rice to the saucepan and toast it for about 2-3 minutes, stirring occasionally, until the rice is lightly golden.
Pour in the vegetable broth (or water) and bring to a boil.
Reduce the heat to low, cover the saucepan, and simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
Once the rice is cooked, remove it from heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork and add lime zest, lime juice, garlic powder, onion powder, and chopped cilantro.
Gently mix everything together, ensuring the rice is evenly coated with the zesty flavors.
Season with salt and pepper to taste.
Notes
For extra flavor, use broth instead of water.
