4 medium carrots, peeled and shredded

1 cup red cabbage, finely shredded

1/2 cup yellow bell pepper, finely diced

1/4 cup fresh cilantro, chopped

1/4 cup roasted peanuts, roughly chopped

1/4 cup raisins or dried cranberries

2 tablespoons sesame oil

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

1 teaspoon grated ginger

Salt and pepper to taste

In a large mixing bowl, combine the shredded carrots, red cabbage, yellow bell pepper, and chopped cilantro. Toss together to mix evenly.

    In a small bowl, whisk together the sesame oil, apple cider vinegar, honey (or maple syrup), grated ginger, salt, and pepper until well combined.

      Pour the dressing over the shredded vegetable mixture and toss thoroughly until everything is evenly coated with the dressing.

        Add in the chopped peanuts and raisins (or dried cranberries) and gently fold them into the salad for added crunch and sweetness.

          Allow the salad to sit for at least 15 minutes before serving to let the flavors meld together.

            Just before serving, give the salad a final toss to mix all the ingredients.
