6 large eggs

1/4 cup milk

1/2 cup bell peppers, diced (mix of red, green, and yellow)

1/4 cup red onion, finely chopped

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar or your favorite blend)

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

Cooking spray or oil for greasing the muffin tin

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or oil.

    In a large bowl, whisk together the eggs and milk until well combined and frothy.

      Stir in the garlic powder, salt, and black pepper into the egg mixture.

        Add the diced bell peppers, red onion, spinach, cherry tomatoes, and shredded cheese to the egg mixture, folding gently to combine.

          Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.

            Bake in the preheated oven for 15-20 minutes, or until the egg is set and the tops are lightly golden.

              Remove from the oven and let cool for a few minutes before carefully removing the omelet bites from the muffin tin with a spoon.

                Serve warm or at room temperature, and enjoy!
