1 lb (450g) beef stew meat, cut into bite-sized cubes

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

1 medium potato, cubed

1 medium zucchini, diced

1 can (14.5 oz) diced tomatoes, with juice

4 cups beef broth

2 cups fresh spinach, roughly chopped

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Heat olive oil in a large pot over medium heat. Add the beef stew meat and brown on all sides, about 5 minutes.

    Add in the diced onion and minced garlic; sauté for 2-3 minutes until the onion becomes translucent.

      Stir in the sliced carrots and diced celery, cooking for another 5 minutes.

        Add the cubed potato, diced tomatoes (with their juice), beef broth, thyme, oregano, bay leaf, salt, and pepper to the pot. Bring to a boil.

          Once boiling, reduce the heat to low and cover. Let it simmer for 45 minutes, stirring occasionally.

            After 45 minutes, add the diced zucchini and spinach. Continue to simmer for an additional 15 minutes, or until all vegetables are tender and flavors are well combined.

              Remove the bay leaf and taste, adjusting seasoning if necessary with salt and pepper.

                Serve hot, garnished with fresh parsley if desired.
