Ingredients

1 sheet of vegan puff pastry, thawed

1 cup fresh strawberries, hulled and sliced

1 tablespoon maple syrup (adjust according to sweetness)

1 teaspoon vanilla extract

1 cup coconut cream (chilled)

2 tablespoons powdered sugar

1 tablespoon lemon juice

1 tablespoon cornstarch (optional, for thickening)

A pinch of salt

1 tablespoon almond slivers (for garnish)

Instructions

Prepare the Strawberries: In a bowl, combine the sliced strawberries, maple syrup, and vanilla extract. Set it aside to allow the flavors to meld for about 10-15 minutes.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Make the Vegan Cream: In a mixing bowl, whip the chilled coconut cream with an electric mixer until soft peaks form. Gradually add the powdered sugar, lemon juice, cornstarch, and salt, mixing until well combined and fluffy.

Roll Out the Pastry: On a floured surface, roll out the vegan puff pastry sheet to flatten slightly. Cut the pastry into rectangles (approximately 3x4 inches) and make a 1/2 inch border on each piece by scoring with a knife.

Assemble the Danish: Place each pastry rectangle on a baking sheet lined with parchment paper. Spoon a dollop of the whipped coconut cream in the center of each rectangle, then top with a generous spoonful of the strawberry mixture.

Bake: Bake in the preheated oven for 15-20 minutes, or until the pastry is golden and puffed.

Cool and Garnish: Once baked, let the danishes cool for a few minutes. Garnish with almond slivers on top before serving.
