2 large eggs

½ cup buttermilk

1 teaspoon baking powder

½ cup raspberry puree (fresh or frozen raspberries blended)

1 cup powdered sugar (for frosting)

½ cup unsweetened cocoa powder

2 tablespoons milk (for frosting)

Instructions
 

Preheat the oven to 350°F (175°C) and line a cupcake tin with heart-shaped cupcake liners.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

        In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, mixing until smooth and just combined.

                Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center comes out clean.

                  While the cupcakes are cooling, prepare the frosting by mixing the powdered sugar, cocoa powder, milk, and a splash of vanilla until smooth and creamy.

                    Once the cupcakes have cooled completely, frost them generously with the chocolate frosting using a piping bag or spatula.
