1 lb ground beef (80% lean)

1 lb ground pork

1 cup finely chopped onion

1 cup finely chopped green bell pepper

1 cup finely chopped mushrooms

2 cloves garlic, minced

1 cup breadcrumbs

1/4 cup milk

2 large eggs

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

8 oz provolone cheese, sliced

1/4 cup chopped fresh parsley (for garnish)

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet over medium heat, add a tablespoon of olive oil. Sauté the chopped onion, bell pepper, and mushrooms until softened, about 5-7 minutes. Add the minced garlic and sauté for another minute. Remove from heat and let cool slightly.

      Mix Meatloaf Ingredients: In a large mixing bowl, combine the ground beef, ground pork, sautéed vegetables, breadcrumbs, milk, eggs, Worcestershire sauce, soy sauce, salt, pepper, and paprika. Mix well using your hands or a large spoon until everything is fully incorporated.

        Shape the Meatloaf: Transfer the mixture onto a baking sheet lined with parchment paper. Form it into a loaf shape, making sure it’s about 2 inches thick for even cooking.

          Add Cheese: Make a trench down the center of the meatloaf and place the sliced provolone cheese inside. Cover the cheese by folding the meat mixture over it, sealing it in. Optionally, top the entire loaf with additional cheese if desired.

            Bake: Bake the meatloaf in the preheated oven for 60-70 minutes or until the internal temperature reaches 160°F (71°C).

              Let Rest: Once cooked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing. This will help the juices redistribute.
