4 medium-sized russet potatoes

1/2 cup unsalted butter, melted

1 cup sharp cheddar cheese, grated

1/2 cup mozzarella cheese, grated

1/4 cup parmesan cheese, grated

4 green onions, finely chopped

2 cloves garlic, minced

Salt and pepper to taste

Preheat your oven to 425°F (220°C).

    Wash and scrub the potatoes thoroughly, then dry them with a towel. Make sure to leave the skins on for added flavor and texture.

      Create Hasselback cuts in each potato by making about 1/8-inch deep slices, stopping just before cutting all the way through. This will help the cheese and buttery goodness penetrate the potato.

        Place the potatoes on a cutting board. Using two wooden spoons or chopsticks on either side of each potato will help you avoid cutting all the way through.

          In a small bowl, mix the melted butter with minced garlic, salt, and pepper. Brush this mixture generously over each potato, ensuring that it seeps into the cuts.

            Wrap each potato in aluminum foil and place on a baking sheet. Bake in the oven for 40 minutes.

              After 40 minutes, remove the foil from the potatoes. Allow them to bake uncovered for an additional 15-20 minutes until they are tender and starting to crisp up.

                Take the potatoes out of the oven and carefully use a fork to gently spread the slices open.

                  Sprinkle the cheddar, mozzarella, and parmesan cheese into the slices, ensuring that the cheese gets into every nook and cranny.
