Ingredients
  

2 cups cheese tortellini (fresh or frozen)

1 tablespoon olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach, packed

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds or until fragrant, being careful not to burn it.

      Add Tomatoes: Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften and release their juices, stirring occasionally.

        Incorporate Spinach: Add the baby spinach to the skillet and cook for another 2-3 minutes, until wilted. Stir in the Italian seasoning and red pepper flakes, if using.

          Combine Tortellini: Gently fold the cooked tortellini into the skillet, mixing well to coat with the tomato and spinach mixture. Season with salt and pepper to taste.

            Add Cheese: Sprinkle the grated Parmesan cheese over the tortellini and stir until well combined. Cook for another minute to allow the cheese to melt and the flavors to meld together.

              Serve: Remove from heat, and garnish with fresh basil leaves before serving.
