Instructions
In a large skillet, heat the olive oil over medium heat.
Add the chopped onion and garlic, sautéing until the onion becomes translucent (about 3-4 minutes).
Stir in the oregano, rosemary, and thyme, cooking for an additional minute until fragrant.
Add the halved cherry tomatoes to the skillet and cook until they soften (approximately 4-5 minutes).
Pour in the vegetable broth and stir well, bringing the mixture to a gentle simmer.
Add the butter beans to the skillet and simmer for about 10 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
Season with salt and pepper to taste.
Remove from heat and let it sit for 5 minutes before serving.
Garnish with fresh parsley before serving.
