Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 tablespoon sugar

2 (8 oz) packages cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup mango puree (fresh or canned)

1 teaspoon lemon juice

1 tablespoon gelatin powder (optional, for a firmer texture)

2 tablespoons warm water (if using gelatin)

Whipped cream for topping

Fresh mango slices for garnish

Mint leaves for decoration

Instructions

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are fully coated.

Press the Crust: Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use a measuring cup or your fingers to compact it well. Refrigerate for 15 minutes to set.

Make the Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and continue mixing until creamy and well-combined.

Add Flavor: Add the mango puree, vanilla extract, and lemon juice to the cream cheese mixture. Mix until fully incorporated and smooth.

Optional Gelatin Step: If using gelatin for a firmer cheesecake, dissolve the gelatin in warm water until fully melted. Slowly add it to the cream cheese mixture while mixing on low speed.

Fill the Crust: Pour the cheesecake filling over the chilled crust and smooth the top with a spatula.

Chill the Cheesecake: Cover the springform pan with plastic wrap and refrigerate for at least 4 hours, ideally overnight, until set.

Serve: Once set, carefully remove the springform sides. Top with whipped cream, fresh mango slices, and mint leaves for garnish. Slice and serve chilled.
