Triple Decker Tomato Grilled Cheese

6 slices of sourdough bread

3 tablespoons unsalted butter, softened

6 slices of sharp cheddar cheese

6 slices of mozzarella cheese

3 medium tomatoes, sliced

1 teaspoon dried basil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Ingredients: Wash and slice the tomatoes. Set aside. Spread softened butter on one side of each slice of sourdough bread.

    Assemble the Sandwich: On a clean working surface, lay out three slices of bread, buttered side down. Place a slice of sharp cheddar cheese on each.

      Layer the Tomatoes: Add a layer of sliced tomatoes on top of the cheddar, then sprinkle with dried basil, garlic powder, salt, and pepper.

        Add More Cheese: Top with one slice of mozzarella cheese for each tomato layer.

          Build the Decker: Place a second slice of sourdough on top of the mozzarella (buttered side up). Repeat the layering process with another layer of cheddar, tomatoes, and mozzarella, then finish with the final slice of bread, buttered side up.

            Grill the Sandwich: Preheat a skillet over medium heat. Carefully place the triple decker sandwich in the skillet. Grill for about 4-5 minutes until the bottom is golden brown and the cheese begins to melt.

              Flip and Cook the Other Side: Use a spatula to gently flip the sandwich. Cook the other side for another 4-5 minutes, pressing down slightly to ensure even grilling.
