Tony’s Flying Dutchman Burger

1 lb ground beef (80/20 blend)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 slices pepper jack cheese

4 large grilled portobello mushroom caps

4 whole grain burger buns

1 avocado, sliced

1 cup fresh spinach leaves

1/4 cup homemade garlic aioli (mayonnaise, minced garlic, lemon juice)

2 tablespoons olive oil

Instructions
 

Prepare the Patties: In a bowl, combine the ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until just combined, then form the mixture into four equal-sized patties, slightly larger than your buns to account for shrinkage while cooking.

    Grill the Portobello Mushrooms: Preheat a grill or grill pan over medium heat. Brush the portobello mushroom caps with olive oil and season with salt and pepper. Grill for about 5 minutes on each side, until they are tender and have nice grill marks. Remove and set aside.

      Cook the Burgers: On the same grill, add the beef patties. Cook for 4-5 minutes on one side, then flip. Place a slice of pepper jack cheese on each patty after flipping. Grill for another 4-5 minutes, or until the burger reaches your desired doneness.

        Toast the Buns: During the last couple of minutes of grilling, place the burger buns cut-side down on the grill to toast. This adds flavor and helps the buns hold up against the juices of the burger.

          Assemble the Burger: Spread a layer of garlic aioli on the bottom half of each toasted bun. Place a handful of fresh spinach leaves on top, followed by the grilled mushroom cap. Add the cheesy beef patty, then layer with sliced avocado. Cap with the top part of the bun.

            Serve: Cut the burger in half for easier handling and serve immediately while warm.
