8 oz spaghetti

2 boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

3 cups fresh spinach

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh basil leaves for garnish (optional)

Cook the Spaghetti: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta cooking water.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, seasoning with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Add the canned diced tomatoes (with their juices), dried basil, and oregano. Stir well and let the mixture simmer for about 5 minutes.

        Add Spinach: Stir in the fresh spinach, letting it wilt down for 2-3 minutes. If the sauce seems too thick, add the reserved pasta water gradually until you reach your desired consistency.

          Combine: Return the cooked chicken to the skillet and toss everything together, allowing the flavors to meld for another 2 minutes.

            Combine with Spaghetti: Finally, add the cooked spaghetti to the skillet. Toss until the pasta is well-coated in the tomato and spinach sauce. Adjust seasoning if necessary.

              Serve: Plate the spaghetti and sauce, then sprinkle with grated Parmesan cheese and garnish with fresh basil leaves if desired.
