Ingredients
  

4 slices of rustic bread (such as sourdough or ciabatta)

2 ripe nectarines, halved and pitted

2 tablespoons olive oil

1/4 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup ricotta cheese

2 tablespoons honey

Fresh mint leaves for garnish

Instructions
 

Preheat your grill pan or outdoor grill over medium heat.

    Brush both sides of the bread slices with olive oil and sprinkle with sea salt and black pepper.

      Place the bread on the grill and toast for about 3-4 minutes on each side, until crisp and golden-brown. Remove from grill and set aside.

        Cut the nectarines into wedges and lightly brush them with olive oil.

          Grill the nectarines for about 2-3 minutes on each side until they are caramelized and have grill marks. Remove from grill and let cool slightly before slicing.

            Spread a generous layer of ricotta cheese on each slice of toasted bread.

              Top the ricotta with the grilled nectarine slices.

                Drizzle honey over the top of the bruschetta for added sweetness.

                  Garnish with fresh mint leaves for a pop of color and flavor.
