1 cup strong brewed coffee, cooled

2 tablespoons cocoa powder, for dusting

3 large eggs, separated

1/2 cup granulated sugar

1 cup mascarpone cheese

1 cup heavy cream, chilled

1 teaspoon vanilla extract

12-15 ladyfinger cookies (savoiardi)

Instructions
 

In a medium bowl, whisk the egg yolks and sugar together until the mixture is pale and creamy.

    Gradually fold in the mascarpone cheese until smooth and well incorporated.

      In another bowl, beat the heavy cream with the vanilla extract until stiff peaks form.

        Gently fold the whipped cream into the mascarpone mixture to keep it light and airy.

          In a shallow dish, pour the cooled coffee. Quickly dip each ladyfinger into the coffee for about 1 second, ensuring they are soaked but not soggy.

            In a 9x9 inch dish (or similar), layer half of the soaked ladyfingers at the bottom.

              Spread half of the mascarpone mixture over the ladyfingers, smoothing it out with a spatula.

                Repeat with another layer of soaked ladyfingers followed by the remaining mascarpone mixture on top.

                  Dust the top layer generously with cocoa powder using a sieve.

                    Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight for optimal flavor blending.

                      Before serving, dust with additional cocoa powder and decorate with chocolate shavings or coffee beans if desired.
