2 pounds beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, sliced

4 cups beef broth

1 tablespoon tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

1 cup frozen peas

2 cups mushrooms, sliced

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped for garnish

Sear the Beef: In a large heavy-bottomed pot, heat olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.

    Sauté Vegetables: In the same pot, add the diced onion and cook until translucent, about 4-5 minutes. Add the minced garlic, carrots, and celery; sauté for another 3 minutes.

      Add Tomato Paste: Stir in the tomato paste, cooking for about 2 minutes to deepen the flavor.

        Simmer the Stew: Return the browned beef to the pot. Pour in the beef broth and add thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil.

          Slow Cook: Reduce the heat to low and cover the pot. Let it simmer for 1.5 to 2 hours until the beef is tender and the flavors meld together. Stir occasionally.

            Add Final Ingredients: During the last 15 minutes of cooking, add the sliced mushrooms and frozen peas to the stew. Stir in the Dijon mustard for a tangy French flavor.

              Adjust Seasoning: Taste and adjust salt and pepper if necessary. Remove the bay leaf before serving.

                Serve: Ladle the stew into bowls and garnish with chopped fresh parsley for an aromatic finish.
