Ingredients
  

2 tablespoons vegetable oil

1 large onion, chopped

2 cloves garlic, minced

1 pound beef chuck, cut into bite-sized cubes

1 red bell pepper, diced

2 carrots, sliced

3 medium potatoes, cubed

1 tablespoon sweet paprika

1 teaspoon caraway seeds

4 cups beef broth

1 can (14 oz) diced tomatoes, with juices

2 bay leaves

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it is translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the beef cubes to the pot and brown them on all sides, about 7-10 minutes.

        Once the beef is browned, add the diced red bell pepper and sliced carrots. Sauté for 3-4 minutes until they begin to soften.

          Sprinkle in the sweet paprika and caraway seeds, stirring well to coat the beef and vegetables.

            Pour in the beef broth and add the diced tomatoes along with their juices. Stir in the bay leaves and season with salt and pepper.

              Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Allow it to simmer for 1 hour, stirring occasionally.

                After 1 hour, add the cubed potatoes and continue to simmer for another 30 minutes, or until the potatoes and beef are tender.

                  Remove the bay leaves before serving and adjust the seasoning if necessary.

                    Ladle the goulash into bowls and garnish with fresh chopped parsley.
