200g rice noodles

1 tablespoon vegetable oil

2 garlic cloves, minced

1 small onion, sliced

1 tablespoon fresh ginger, grated

2 tablespoons red curry paste

1 can (400ml) coconut milk

2 cups vegetable or chicken broth

1 tablespoon soy sauce

1 tablespoon lime juice

1 cup baby spinach

1 red bell pepper, sliced

1 carrot, julienned

1 teaspoon sugar

Fresh basil leaves, for garnish

Lime wedges, for serving

Chili flakes, optional for extra heat

Cook the Rice Noodles: Prepare the rice noodles according to package instructions. Drain and set aside.

    Sauté Aromatics: In a large pot, heat the vegetable oil over medium heat. Add the minced garlic, sliced onion, and grated ginger. Sauté for 2-3 minutes until fragrant and the onion is translucent.

      Add Curry Paste: Stir in the red curry paste and cook for another minute, ensuring the paste is well combined with the aromatics.

        Add Liquid Ingredients: Pour in the coconut milk and broth, stirring well to combine. Bring the mixture to a gentle simmer.

          Season the Soup: Add the soy sauce, lime juice, and sugar to the pot. Stir well and let the soup simmer for about 5 minutes, allowing the flavors to meld.

            Incorporate Vegetables: Add the sliced red bell pepper, julienned carrot, and baby spinach. Cook for an additional 3-4 minutes until the vegetables are tender but still vibrant.
