1 pound ground chicken

1 tablespoon olive oil

1/4 cup low-sodium soy sauce

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1/2 cup green onions, chopped

1/4 cup grated carrots

1/4 cup water chestnuts, diced

1 head of butter lettuce, leaves separated

Sesame seeds for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the ground chicken and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    In a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, and minced garlic to create the teriyaki sauce.

      Pour the teriyaki sauce over the browned chicken in the skillet. Stir to combine and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

        Add the chopped green onions, grated carrots, and diced water chestnuts into the skillet. Mix well and cook for another 1-2 minutes, just until the vegetables are heated through.

          Remove from heat and let the mixture cool slightly.

            To serve, spoon approximately 2-3 tablespoons of the teriyaki chicken mixture into each lettuce leaf.

              Garnish with sesame seeds before serving.
