4 large flour tortillas

1 cup cooked ground beef (or turkey)

1 cup shredded cheddar cheese

1/2 cup black beans, rinsed and drained

1/2 cup corn (canned or frozen)

1 small red onion, finely chopped

1 cup shredded lettuce

1/2 cup salsa

1/4 cup sour cream

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro (for garnish)

Instructions
 

In a mixing bowl, combine the cooked ground beef (or turkey), black beans, corn, chopped red onion, shredded lettuce, cumin, chili powder, salt, and pepper. Mix well to ensure all ingredients are evenly combined.

    Lay out a flour tortilla flat on a clean surface. Spoon a generous amount of the beef mixture onto the center of the tortilla.

      Sprinkle shredded cheddar cheese over the beef mixture, followed by a drizzle of salsa and sour cream.

        Carefully fold in the sides of the tortilla over the filling, then tightly roll up from the bottom to the top, creating a cylindrical shape. Repeat the process for the remaining tortillas.

          Once all tortillas are rolled, you can choose to slice them into bite-sized pinwheels or serve them whole.

            Optional: For a crispy finish, heat a skillet over medium heat and lightly toast the rolls on all sides until golden brown.

              Arrange the roll-ups on a serving platter and garnish with fresh cilantro.
