12 oz cheese tortellini (fresh or frozen)

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 pound ground beef or turkey

1 tablespoon taco seasoning

1 can (15 oz) diced tomatoes, drained

1 cup beef or vegetable broth

1 cup corn (canned or frozen)

1 cup black beans, drained and rinsed

1 cup shredded cheddar cheese

1 avocado, diced (for topping)

Fresh cilantro (for garnish)

Salt and pepper to taste

In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 3-4 minutes, until softened.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the ground beef or turkey to the pot, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes. Season with taco seasoning, salt, and pepper.

        Once the meat is cooked, add the drained diced tomatoes and broth to the pot, stirring to combine. Bring the mixture to a gentle simmer.

          Carefully add the cheese tortellini, corn, and black beans to the pot, gently stirring to ensure the tortellini is submerged in the liquid.

            Cover the pot and let it cook for 8-10 minutes, or until the tortellini are cooked through and everything is heated. Stir occasionally to prevent sticking.

              Once the tortellini are cooked, remove from heat and sprinkle the shredded cheddar cheese on top. Cover again for a couple of minutes until the cheese melts.

                Serve hot, garnished with diced avocado and fresh cilantro on top for a burst of freshness.
