1 lb ground beef or turkey

1 packet taco seasoning

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 cup salsa

1 cup diced tomatoes (fresh or canned)

2 cups tortilla chips, crushed

2 cups shredded cheddar cheese

1 cup sour cream

1/2 cup green onions, chopped

Fresh cilantro for garnish (optional)

Salt and pepper to taste

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if necessary.

      Stir in the taco seasoning, black beans, corn, salsa, and diced tomatoes. Cook for about 5 minutes until everything is heated through. Add salt and pepper to taste.

        In a greased 9x13 inch casserole dish, layer half of the crushed tortilla chips evenly across the bottom.

          Spoon half of the meat mixture over the chips, followed by half of the sour cream.

            Sprinkle half of the shredded cheddar cheese over the sour cream layer.

              Repeat the layers with the remaining chips, meat mixture, sour cream, and finish with the rest of the cheese on top.

                Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.

                  Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions and cilantro if desired.

                    Serve warm and enjoy your flavorful taco casserole!
