Sweet Potato Hash

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust to taste)

3 tablespoons olive oil

Salt and pepper to taste

4 large eggs (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat.

    Add the diced sweet potatoes to the skillet and season them with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they start to soften and get slight browning on the edges.

      Add the chopped red onion and continue to sauté for another 3 minutes until the onion becomes translucent.

        Stir in the minced garlic, smoked paprika, ground cumin, and cayenne pepper. Cook for an additional minute until fragrant.

          Next, add both diced bell peppers to the skillet and mix well. Pour in the remaining olive oil if the mixture looks dry. Sauté for another 5-7 minutes until all the vegetables are tender and slightly caramelized.

            If using eggs, create four small wells in the hash and crack an egg into each well. Cover the skillet with a lid and let it cook for about 5-7 minutes, or until the eggs are cooked to your liking (runny or firm).

              Once everything is cooked, remove the skillet from heat. Garnish your sweet potato hash with freshly chopped parsley.
