Sweet Potato Casserole with Marshmallows

4 medium sweet potatoes, peeled and cubed

1/2 cup brown sugar

1/4 cup unsalted butter, melted

1/2 cup milk

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 cup mini marshmallows

1/2 cup chopped pecans (optional)

A pinch of salt

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot, bring water to a boil and add the cubed sweet potatoes. Cook for about 15-20 minutes or until tender. Drain well.

      In a mixing bowl, mash the cooked sweet potatoes until smooth.

        Add the brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until everything is well blended and creamy.

          Transfer the sweet potato mixture to a greased 9x13 inch baking dish.

            If using, evenly sprinkle chopped pecans on top of the sweet potato mixture for added crunch.

              Bake in the preheated oven for 25 minutes.

                After 25 minutes, remove the casserole from the oven and top it with mini marshmallows. Return it to the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden and toasted.

                  Once done, remove from the oven and let it cool for a few minutes before serving.
