Ingredients
  

12 ounces pasta (spaghetti or penne)

1 cup sun-dried tomatoes (packed in oil, drained)

1/2 cup fresh basil leaves, packed

1/4 cup pine nuts (toasted)

1/4 cup grated Parmesan cheese (or nutritional yeast for vegan option)

2 cloves garlic

1/2 cup olive oil

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes (for a kick)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

    Prepare the Pesto: In a food processor, combine the sun-dried tomatoes, fresh basil, pine nuts, Parmesan cheese, and garlic. Pulse until it forms a chunky paste.

      Add Olive Oil: With the food processor running, gradually pour in the olive oil until the mixture becomes a smooth pesto. If it’s too thick, add some reserved pasta water to reach your desired consistency.

        Mix with Pasta: In a large mixing bowl, combine the cooked pasta with the sun-dried tomato pesto. Toss well until the pasta is evenly coated.

          Season: Season the pasta with salt, pepper, and optional red pepper flakes to taste. Mix well.

            Serve: Plate the pesto pasta while warm. Drizzle with a little more olive oil and sprinkle additional Parmesan cheese if desired.
