Summer Cherry Spaghetti

250g spaghetti

200g fresh cherries, pitted and halved

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

50g goat cheese, crumbled

Fresh basil leaves for garnish

Salt and pepper to taste

Instructions
 

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Add the red pepper flakes and halved cherries to the skillet. Cook for 3-4 minutes, stirring frequently until the cherries start to soften.

        Stir in the cherry tomatoes and cook for another 3-4 minutes until they are slightly softened and releasing their juices. Season with salt and pepper to taste.

          Toss the cooked spaghetti into the skillet, adding reserved pasta water a little at a time until the spaghetti is well coated in the sauce.

            Remove from heat and sprinkle crumbled goat cheese over the pasta, allowing it to soften slightly.

              Toss everything together again until combined, then serve hot.

                Garnish with fresh basil leaves before serving.
