1 cup fresh blueberries

2 cups sparkling water

1 tablespoon sugar-free blueberry syrup (or homemade)

1/2 cup heavy cream

1 teaspoon vanilla extract

Ice cubes

Fresh mint leaves for garnish

Instructions
 

In a small saucepan, combine the fresh blueberries and 1/4 cup of water. Bring to a simmer over medium heat and cook for about 5 minutes until the blueberries have burst and released their juices.

    Strain the blueberry mixture through a fine-mesh sieve into a bowl to remove the solids, allowing the juice to collect in the bowl. Discard the solids.

      Add the sugar-free blueberry syrup to the strained juice, mixing well. If you prefer it sweeter, you can adjust the syrup amount to taste.

        In a separate bowl, whisk together the heavy cream and vanilla extract until slightly thickened, but still pourable.

          In glasses, layer ice cubes, followed by a few tablespoons of the blueberry mixture, and then fill the glass with sparkling water until nearly full.

            Gently pour the vanilla cream over the top, allowing it to swirl into the soda for a beautiful marbled effect.

              Garnish with fresh mint leaves on top and serve immediately with a straw or a stirrer.
