2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs, diced

1 cup fresh corn kernels (or canned if unavailable)

1 red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup mayonnaise

2 tablespoons lime juice

1/4 cup crumbled feta cheese (optional)

Fresh cilantro, chopped for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt, pepper, chili powder, cumin, and smoked paprika. Sauté until the chicken is cooked through and golden brown, about 7-10 minutes.

    Add the chopped red onion and garlic to the skillet with the chicken, cooking for an additional 2-3 minutes until the onion is soft and fragrant.

      Stir in the corn kernels and diced red bell pepper, cooking for another 3-4 minutes until the corn is heated through and slightly charred. Remove from heat.

        In a small bowl, combine the mayonnaise and lime juice. Mix until smooth and adjust seasoning with salt if needed.

          To assemble the rice bowls, start with a base of jasmine rice. Top with the chicken and street corn mixture. Drizzle the lime mayonnaise over the top.

            Garnish each bowl with crumbled feta cheese (if using) and freshly chopped cilantro for freshness.
