2 cups fresh strawberries, hulled and sliced

2 tablespoons sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract (for whipped cream)

1 store-bought pound cake (or homemade if preferred), cut into cubes

1 cup vanilla yogurt (optional but adds creaminess)

Fresh mint leaves for garnish

Instructions
 

In a medium bowl, combine the sliced strawberries and sugar. Toss gently and let sit for about 15-20 minutes, allowing the strawberries to macerate and release their natural juices.

    While the strawberries are resting, prepare the whipped cream. In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and 1 teaspoon of vanilla extract using a hand mixer or stand mixer until soft peaks form. Be careful not to over-whip.

      In a clear glass trifle dish or individual serving glasses, start layering the ingredients. Begin with a layer of pound cake cubes at the bottom.

        Next, add a layer of the macerated strawberries, including some of their juices. Follow this with a generous scoop of vanilla yogurt, if using, or simply top with a layer of whipped cream.

          Repeat the layering process until the trifle glasses or dish are filled, ending with a layer of whipped cream on top.

            Finish with a few slices of fresh strawberries and a sprig of mint for garnish.

              Refrigerate the trifles for at least 30 minutes to 1 hour before serving to allow the flavors to meld.
