Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

3 large eggs

3/4 cup granulated sugar

1 teaspoon vanilla extract

2 tablespoons melted butter

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract (for cheesecake layer)

2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

Additional powdered sugar for dusting

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Cake Roll Base: Preheat your oven to 350°F (175°C). Grease a 15x10 inch jelly roll pan and line it with parchment paper, leaving extra on the sides for easy removal.

Mix the Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Make the Cake Batter: In a large mixing bowl, beat the eggs and granulated sugar with an electric mixer on high speed until thick and pale, about 3-5 minutes. Mix in the melted butter and vanilla extract. Gradually fold in the dry ingredients until just combined.

Bake the Cake: Pour the batter into the prepared pan, spreading it evenly. Bake for about 12-15 minutes until it's lightly golden and a toothpick inserted in the center comes out clean.

Roll the Cake: Once baked, remove the cake and immediately invert it onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper, then roll the cake up tightly with the towel from one short end to the other. Let it cool completely while rolled.

Prepare the Cheesecake Filling: In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until combined.

Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.

Assemble the Dessert Roll: Carefully unroll the cooled cake. Spread the cheesecake filling over the cake evenly. Sprinkle the sliced strawberries on top of the cheesecake layer.

Roll it Back Up: Starting from the short edge, roll the cake back up (without the towel), encasing the strawberries and cheesecake. Transfer the roll to a serving platter, seam side down.

Chill and Serve: Refrigerate for at least 1 hour before slicing. Dust with powdered sugar before serving and garnish with fresh mint leaves if desired.
