3 large eggs

3/4 cup granulated sugar

1 teaspoon vanilla extract

2 tablespoons melted butter

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract (for cheesecake layer)

2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

Instructions

Prepare the Cake Roll Base: Preheat your oven to 350°F (175°C). Grease a 15x10 inch jelly roll pan and line it with parchment paper, leaving extra on the sides for easy removal.

Mix the Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Make the Cake Batter: In a large mixing bowl, beat the eggs and granulated sugar with an electric mixer on high speed until thick and pale, about 3-5 minutes. Mix in the melted butter and vanilla extract. Gradually fold in the dry ingredients until just combined.

Roll the Cake: Once baked, remove the cake and immediately invert it onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper, then roll the cake up tightly with the towel from one short end to the other. Let it cool completely while rolled.
