1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

¾ cup buttermilk

1 cup fresh strawberries, hulled and chopped

½ cup powdered sugar (for frosting)

1 cup heavy whipping cream (for frosting)

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

    In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3–4 minutes.

      Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        In another bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.

            Gently fold in the chopped strawberries until evenly distributed throughout the batter.

              Divide the batter evenly among the lined muffin cups, filling each about 2/3 full.

                Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted in the center comes out clean.

                  While cupcakes are cooling, prepare the frosting. In a large bowl, whip the heavy cream until it starts to thicken. Then, gradually add the powdered sugar and continue to whip until stiff peaks form.

                    Once the cupcakes are completely cooled, frost them generously with the whipped cream frosting and garnish with additional strawberries on top.
