1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups fresh strawberries, hulled and sliced

1 tablespoon lemon juice

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.

      Press the crumb mixture into the bottom and up the sides of a 9-inch pie pan to form a crust.

        Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool completely.

          In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth.

            Gradually add the powdered sugar and vanilla extract, beating until fluffy and well combined.

              In another bowl, whip the heavy cream until stiff peaks form.

                Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

                  Pour the creamy filling into the cooled pie crust and spread evenly.

                    In a separate bowl, toss the sliced strawberries with lemon juice to prevent browning. Layer the strawberries over the cream filling in an even pattern.

                      Chill the pie in the refrigerator for at least 2 hours to set.

                        Before serving, garnish with fresh mint leaves if desired.
