Ingredients

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup whipped cream

1 cup fresh strawberries, diced

1/4 cup strawberry jam (optional, for extra flavor)

1/4 cup mini chocolate chips (for garnish)

Instructions

In a medium bowl, combine the graham cracker crumbs and melted butter. Mix well until the mixture resembles wet sand. Press this mixture firmly into the bottom of a lined baking dish (8x8 inches) to create a crust.

In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy.

Gradually add the powdered sugar and continue to mix until well combined. Then, add the vanilla extract and mix until incorporated.

Gently fold in the whipped cream into the cream cheese mixture until light and fluffy.

Stir in the diced strawberries and the optional strawberry jam for enhanced flavor. Mix gently to avoid mashing the strawberries.

Pour the cheesecake filling over the prepared graham cracker crust and spread it evenly.

Cover with plastic wrap and refrigerate for at least 4 hours, or until set (overnight is ideal if possible).

Once set, remove the cheesecake from the fridge and cut it into bite-sized squares.

For serving, sprinkle mini chocolate chips on top of each cheesecake bite for added crunch and garnish.

Prep Time: 20 minutes | Total Time: 4 hours 20 minutes | Servings: 16 bites

                      - Presentation Tips: Arrange the bites on a decorative plate, and drizzle a bit of strawberry jam around them for a pop of color. Garnish with mint leaves for an added fresh touch!
