Ingredients

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, diced

1/4 cup heavy cream

1/4 cup white chocolate chips, melted

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Base: In a medium bowl, mix the graham cracker crumbs and melted butter until fully combined. Press this mixture firmly into the bottom of a lined mini muffin tray to form the base. Chill in the refrigerator for about 15 minutes.

Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and continue mixing until well combined. Mix in the vanilla extract and diced strawberries until evenly distributed.

Whip the Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold this whipped cream into the cream cheese mixture until there are no streaks visible.

Assemble the Bites: Remove the graham cracker bases from the fridge. Spoon the cheesecake filling over the prepared bases, filling each cup just to the top. Use a spatula to smooth the surface.

Chill Again: Return the muffin tray to the fridge and let the cheesecake bites chill for at least 2 hours, or until set.

Finish with Chocolate: Before serving, drizzle the melted white chocolate over the cheesecake bites for a decorative touch. If desired, use a fork or a piping bag to create pretty designs.

Garnish: Top each cheesecake bite with small pieces of fresh strawberries and optional mint leaves for a fresh pop of color.

Prep Time: 20 minutes | Total Time: 2 hours 20 minutes | Servings: 12 bites
