Ingredients

2 ribeye steaks (about 8 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

4 slices of crusty bread (such as ciabatta or sourdough)

1 cup arugula

1 small red onion, thinly sliced

½ cup cherry tomatoes, halved

1 tablespoon balsamic glaze (optional)

For the Garlic Aioli:

½ cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper, to taste

Instructions

Prepare the Garlic Aioli: In a small bowl, mix the mayonnaise, minced garlic, lemon juice, and a pinch of salt and pepper. Whisk until smooth and well combined. Set aside in the refrigerator to let the flavors meld.

Cook the Steaks: Preheat a grill or a cast-iron skillet over medium-high heat. Rub both sides of the steaks with olive oil, then season generously with salt and pepper. Place the steaks on the grill or skillet and cook for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing thinly against the grain.

Toast the Bread: While the steaks are resting, toast the slices of crusty bread on the grill or in a toaster until golden brown and crispy.

Assemble the Sandwich: Spread a generous amount of garlic aioli on one side of each slice of toasted bread. Layer the sliced steak on the bread, followed by arugula, sliced red onions, and cherry tomatoes. Drizzle with balsamic glaze if desired for a touch of sweetness.

Close and Serve: Top with another slice of bread, aioli side down, and press gently. Slice the sandwiches in half to make them easier to handle.

            - Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 2 sandwiches

Presentation Tips: Serve the steak sandwiches on a rustic wooden board accompanied by a side of sweet potato fries or a simple salad. Garnish the plate with fresh herbs for a pop of color.
