2 boneless ribeye steaks (about 1 inch thick)

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 medium onion, thinly sliced

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust for spice preference)

1 bell pepper (red or green), sliced

1/4 cup fresh basil leaves, torn

1/2 cup shredded mozzarella cheese (optional)

Instructions
 

Prepare the Steaks: Season the ribeye steaks with salt and black pepper on both sides. Allow them to sit at room temperature for 15-20 minutes while you prepare the other ingredients.

    Sear the Steaks: In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks and sear for about 3-4 minutes on each side until browned. Remove the steaks from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add sliced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        Add Tomatoes and Spices: Pour in the crushed tomatoes, oregano, red pepper flakes, and sliced bell pepper. Stir to combine, then let the sauce simmer for 5 minutes, allowing the flavors to meld.

          Combine and Cook: Return the seared steaks to the skillet, nestling them into the sauce. Cover the skillet and let the steaks cook in the tomato sauce for about 7-10 minutes or until they reach your desired level of doneness.

            Add Basil and Cheese: In the final minute of cooking, sprinkle the torn basil leaves over the steaks and top with shredded mozzarella cheese if using. Cover to let the cheese melt slightly.

              Serve: Once the steaks are cooked through and the cheese is melted, remove from heat. Let them rest for a couple of minutes before slicing.
