2 ribeye steaks (about 1 inch thick)

2 tablespoons olive oil

Salt and pepper to taste

4 tablespoons unsalted butter

2 cloves garlic, minced

1 tablespoon fresh thyme leaves

1 tablespoon fresh rosemary, finely chopped

2 large russet potatoes, cut into thin fries

1 tablespoon paprika

1 teaspoon garlic powder

Fresh parsley, chopped (for garnish)

Prepare the Fries: Rinse the cut potatoes in cold water to remove excess starch. Pat them dry with a kitchen towel.

    Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

      Season the Fries: In a large bowl, toss the potatoes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated. Spread them out in a single layer on the prepared baking sheet.

        Bake the Fries: Bake in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy.

          Cook the Steaks: While the fries are baking, season both sides of the ribeye steaks with salt and pepper.

            Heat a Skillet: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, add the steaks. Cook for about 4-5 minutes on each side (for medium-rare), adjusting time for desired doneness.

              Add Flavor: In the last minute of cooking, reduce the heat to medium-low and add the butter, garlic, thyme, and rosemary to the skillet. Baste the steaks with the melted herb butter using a spoon.

                Rest the Steaks: Once cooked, transfer the steaks to a plate and let them rest for 5 minutes before slicing.

                  Serve and Enjoy: Serve the steak slices alongside the crispy fries. Drizzle any remaining herb butter over the top and sprinkle with fresh parsley.
